As somebody who doesn't have a lot of drag racing knowledge, I have so many questions. Why does a car fast enough to require a 'chute not have wheelie bars? Would they even have helped? It looks like it went in two stages why didn't he lift? Happen too fast? Too busy with a Code Brown?

This class of drag racing is referred to as "drag radial" and wheelie bars are not allowed. The idea is to limit traction and how much power you can put to the track so that driver skill and tune up are more important than money.
Also wheelie bars are for sissies.

Also, why are there so many people on the track? Seems to me, you need two or three officials, and one or two crew members from each car. There must be a hundred people there.

This happened to my brother's buddy and his badass Belvedere at Pomona back when I was in high-school. Twisted the wheelie bar all to shit.
